- 3 c. sliced zucchini
- 2 c. sliced mushrooms
- 1 c. chopped onion
- 2 cloves garlic, finely chopped
- 1 Tbsp. olive oil
- 1 (26 oz.) pasta sauce
- 1 tsp. oregano
- 1 (16 oz.) nonfat cottage cheese or Ricotta cheese
- 1 c. grated Parmesan cheese
- 1 lb. lasagna noodles
- 2 c. shredded Mozzarella cheese
Directions

1Cook vegetables and garlic in oil until tender.

2Stir in sauce and oregano; simmer 15 minutes.

3Combine cottage cheese and Parmesan cheese.

4In 9 x 13-inch baking dish, layer 1/2 each of the noodles, sauce, cottage cheese and Mozzarella.

5Repeat layering.

6Cover; bake at 350° for 45 minutes.

7Uncover; bake 15 minutes.

8Let stand 15 minutes before serving.
