  • 3 c. sliced zucchini
  • 2 c. sliced mushrooms
  • 1 c. chopped onion
  • 2 cloves garlic, finely chopped
  • 1 Tbsp. olive oil
  • 1 (26 oz.) pasta sauce
  • 1 tsp. oregano
  • 1 (16 oz.) nonfat cottage cheese or Ricotta cheese
  • 1 c. grated Parmesan cheese
  • 1 lb. lasagna noodles
  • 2 c. shredded Mozzarella cheese

Directions

    Cook vegetables and garlic in oil until tender.

    Stir in sauce and oregano; simmer 15 minutes.

    Combine cottage cheese and Parmesan cheese.

    In 9 x 13-inch baking dish, layer 1/2 each of the noodles, sauce, cottage cheese and Mozzarella.

    Repeat layering.

    Cover; bake at 350° for 45 minutes.
