- 1 lemon
- 1/3 c. diced red onion
- 2 medium carrots, peeled and diced
- 1 clove garlic, minced
- 3 Tbsp. oil
- 1 medium zucchini, diced
- 1/4 tsp. ground cumin
- salt and pepper to taste
Directions

1Grate 1/2 teaspoon peel from lemon and squeeze 1 tablespoon juice.

2In a nonstick frying pan heat 1 tablespoon oil over high heat.

3Add onions and carrots and cook, stirring until tender, about 4 minutes.

4Add zucchini and garlic.

5Cook about 4 minutes longer.

6Add cumin, 1 teaspoon salt, 1/4 teaspoon pepper and 1 teaspoon oil.

7Add the lemon peel and juice.
