  • 2 boxes mixed frozen vegetables
  • 1 (8 oz.) bottle creamy Italian dressing
  • 1 can cream of asparagus soup
  • 1 (4 oz.) jar sliced mushrooms
  • 1 c. grated sharp Cheddar
  • 2 eggs
  • 2 Tbsp. instant onion
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 c. margarine, melted
  • crushed crackers (enough to cover casserole)

Directions

    Cook veggies as directed; drain.

    Mix all ingredients together (except for crackers and margarine).

    Spread in Pyrex dish.

    Top with crushed crackers (Ritz or Club).

    Drizzle margarine over top.

    Bake at 300° for 40 minutes.
