- 2 carrots, cut crosswise into halves, then into strips
- 1 medium onion, cut into 1/4-inch slices
- 3 c. sliced fresh mushrooms
- 1/4 c. butter
- 1 tsp. salt
- 1/4 tsp. garlic salt
- pepper to taste
- lemon juice (optional)
Directions

1Hollow out 4 tomatoes and fill with:

21 cup Cheddar cheese, 1 cup bread crumbs, minced onion, minced parsley, nutmeg and melted butter to moisten.

3Sprinkle salt on top and put tops of tomatoes back on and bake in oven at 350° until done.
