Ingredients

  • 3 cups prepared pasta, of choice
  • 14 cup olive oil
  • 2 tablespoons butter
  • 1 medium yellow squash, cut up into chunks peel left on if preferred
  • 1 medium zucchini, cut up into chucks peel left on if preferred
  • 4 ounces fresh mushrooms, cut up
  • 1 small tomatoes, cut up
  • 1 garlic clove, minced
  • 1 small onion, chopped finely
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 4 ounces mozzarella cheese

Directions

    Heat 1/8 cup olive oil and butter in medium skillet over medium heat until butter melts.

    Add onion and garlic and cook until onion is tender, stirring occasionally.

    Stir in zucchini,squash, oregano, and salt; cook until squashes are tender crisp.

    Add mushrooms and prepared pasta.

    Add remainder of olive oil to coat pasta and vegetables.

    Stir.

    Add tomatoes and heat for a few minutes on low heat.

    Remove from heat and sprinkle dish with mozzeralla cheese.
