- 2 eggs
- 1/4 tsp. pepper
- 3 Tbsp. milk
- 1 c. cold mashed potatoes
- 1/2 c. flour
- 1 c. cooked or canned whole kernel corn
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. chopped parsley
Directions

1Beat the eggs and milk together.

2Sift flour, baking powder, salt and pepper into eggs and milk.

3Beat until well mixed.

4Add mashed potatoes and beat again.

5Stir the well drained corn kernels in with spoon or rubber spatula along with chopped parsley.

6Drop by spoonful onto shortening which has been heated until an inch square of bread will brown in a minute (1 1/2-inches of shortening in pan).

7Each puff must be turned in a few minutes, so fry only 4 or 5 at a time.
