- 1 small zucchini
- 1 small eggplant
- 1 small yellow squash
- 1 small tomato
- 1 green pepper
- 3 Tbsp. finely chopped onion
- 1 tsp. finely chopped garlic
- 1 c. rice
- 1 can chicken broth
- 1 bay leaf
Directions

1Chop the first five vegetables into small pieces.

2Heat 2 tablespoons of canola oil in pan.

3Add and cook the onion and garlic for a minute.

4Add rice, skimmed chicken broth, bay leaf and salt and pepper.

5Bring to a boil. Cover and let simmer for 17 minutes.

6Remove bay leaf and serve.
