  • 1 small zucchini
  • 1 small eggplant
  • 1 small yellow squash
  • 1 small tomato
  • 1 green pepper
  • 3 Tbsp. finely chopped onion
  • 1 tsp. finely chopped garlic
  • 1 c. rice
  • 1 can chicken broth
  • 1 bay leaf

Directions

    Chop the first five vegetables into small pieces.

    Heat 2 tablespoons of canola oil in pan.
  3. 3
    Add and cook the onion and garlic for a minute.

    Add rice, skimmed chicken broth, bay leaf and salt and pepper.

    Bring to a boil. Cover and let simmer for 17 minutes.

    Remove bay leaf and serve.
