- 2 large new potatoes, washed and peeled
- 3 large carrots, washed and peeled
- 1 c. fresh, green or yellow string beans, washed and cut
- 1 c. newly shelled peas
- 1/2 head fresh cauliflower
- 1 large cucumber
- about 1 c. French dressing
- salt and pepper
- chopped fresh parsley
Directions

1Dice the potatoes and carrots into cubes about the size of 2 peas.

2Cook them in boiling, salted water, together with the cut string beans and the peas, for about 6 to 7 minutes.

3They should be barely tender, still firm.
