  • 1 onion, thinly sliced
  • 1 clove garlic
  • 4 zucchini, cut in strips
  • 1 c. fresh mushrooms, sliced
  • 10 small tomatoes, halved
  • 1/2 tsp. salt
  • 1/4 tsp. oregano
  • 1/8 tsp. pepper
  • 1/2 c. shredded Cheddar
