Vegetable Soup

Ingredients

  • 2 qts. water
  • 1 c. cubed potatoes
  • 1/2 c. corn
  • 1/2 c. chopped okra
  • 1/2 c. chopped onions
  • 2 c. chopped or canned tomatoes
  • 1 Tbsp. oil
  • 1 Tbsp. butter
  • salt and pepper to taste
  • 3 Tbsp. cornmeal, mixed with a little water

Directions

    Put 2 qts. water in a lg. pot and next 4 ingredients, cook for 20 minutes.

    Add tomatoes, oil, butter, salt and pepper and simmer for about 40 minutes.

    Mix a little water with cornmeal mix and add to soup.

    Cook 2 to 3 minutes.

    Very good served with cornbread.
