Ingredients

  • 1 1/2 lb. beef shank
  • 1 Tbsp. salt
  • potatoes
  • 1 can yellow beans
  • 1 qt. tomatoes
  • 2 small onions
  • 2 stalks celery
  • 2 bay leaves
  • 6 black peppers
  • 1 can green beans
  • 1/2 c. alphabet macaroni
  • shredded cabbage

Directions

    Boil beef shank in water.

    Remove scum.

    Add salt, bay leaves, peppers, tomatoes and onions.

    Simmer until tomatoes flake (1 1/2 to 2 hours).

    Add celery, potatoes and carrots.

    Boil 1/2 hour longer, then add beans, cabbage and macaroni.

    Boil for 1/2 hour more.
