  • 1 soup bone with meat
  • 1/4 cup oil
  • 4 cups water
  • 1 medium onion, chopped
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1 28-ounce can tomatoes, chopped
  • 1 tablespoon salt
  • 2 sprigs parsley, finely chopped
  • 2 bay leaves, crumbled
  • 5 peppercorns
  • 1/2 teaspoon thyme
  • 1/2 teaspoon marjoram
  • 2 cups each green beans, corn, peas, diced potatoes
  • 2 cups sliced okra cabbage, if desired

Directions

    Cut the meat off bone; brown in hot oil.

    Add water to meat and bone; cook 2 1/2 hours over low heat.
