- 1 soup bone with meat
- 1/4 cup oil
- 4 cups water
- 1 medium onion, chopped
- 1 cup sliced carrots
- 1 cup sliced celery
- 1 28-ounce can tomatoes, chopped
- 1 tablespoon salt
- 2 sprigs parsley, finely chopped
- 2 bay leaves, crumbled
- 5 peppercorns
- 1/2 teaspoon thyme
- 1/2 teaspoon marjoram
- 2 cups each green beans, corn, peas, diced potatoes
- 2 cups sliced okra cabbage, if desired
Directions

1Cut the meat off bone; brown in hot oil.

2Add water to meat and bone; cook 2 1/2 hours over low heat.

3Add vegetables and seasonings.

4Cook 30-60 minutes, adding water for desired consistency.

5Yields 2 1/2 quarts.
