Vegetable Soup

Ingredients

  • 1 or 1 1/2 lb. ground chuck or ground sirloin
  • 3 onions, chopped
  • 1 clove garlic, minced
  • 2 (1 lb.) cans tomatoes
  • 24 oz. V-8 juice
  • 2 cans consomme
  • 2 c. water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. Italian seasoning
  • 1/2 c. rice
  • 1/2 c. spaghetti, broken up (or diced potatoes)
  • 1 (24 oz.) pkg. frozen mixed vegetables

Directions

    Brown meat and saute onions and garlic.

    Add consomme, water, tomatoes (break whole tomatoes in pieces), V-8 and seasonings. Simmer about 30 minutes.

    Add rice, spaghetti and vegetables. Simmer 20 minutes.

    This makes a very thick soup.

    It may be diluted with tomato juice, V-8 or water, if desired.

    Makes about a gallon.
