- 3 carrots
- 1 leek
- 1 garlic clove
- 1 onion
- 13/16 cup pumpkin
- 1 5/8 cups zucchini
- 1 potato
- 5 1/4 ounces green beans
- water to taste
- coarse salt to taste
- 2 tablespoons olive oil
- cream or soy cream, to garnish
Directions

1Wash the vegetables, peel and cut into small pieces.

2Put everything together in a saucepan and cover the vegetables with water. Season with salt and simmer until the vegetables are tender (approximately 30 minutes). Puree the soup using a hand blender.

3Check the seasoning.

4If you find that the soup is too thick, add 1 cup of hot water and let it boil.

5Finally add the olive oil and garnish with a spoonful of cream.
