Ingredients

  • 1 Tbsp. oil
  • 1 clove crushed garlic
  • 1 c. mushrooms
  • 1 small onion
  • 1/2 c. sliced carrots
  • 1/2 c. celery
  • 1/2 c. water
  • 2 medium potatoes
  • 1 (14 oz.) can butter beans
  • 1/3 c. beef broth
  • 6 oz. can tomato paste
  • 1 tsp. thyme
  • 1/2 tsp. allspice
  • 1 bay leaf
  • salt to taste
  • pepper to taste

Directions

    In hot pan, add oil, garlic, mushrooms and onion; saute.

    Add carrots and celery and saute lightly.

    Add water, potatoes, butter beans, beef broth and tomato paste.

    Bring to a boil.

    Add thyme, allspice, bay leaf, salt and pepper.

    Simmer until done.
