- 1 Tbsp. oil
- 1 clove crushed garlic
- 1 c. mushrooms
- 1 small onion
- 1/2 c. sliced carrots
- 1/2 c. celery
- 1/2 c. water
- 2 medium potatoes
- 1 (14 oz.) can butter beans
- 1/3 c. beef broth
- 6 oz. can tomato paste
- 1 tsp. thyme
- 1/2 tsp. allspice
- 1 bay leaf
- salt to taste
- pepper to taste
Directions

1In hot pan, add oil, garlic, mushrooms and onion; saute.

2Add carrots and celery and saute lightly.

3Add water, potatoes, butter beans, beef broth and tomato paste.

4Bring to a boil.

5Add thyme, allspice, bay leaf, salt and pepper.

6Simmer until done.
