  • 2 carrots, sliced
  • 1 leek (white only)
  • 1/2 celery, sliced
  • 1/2 fennel, sliced
  • 4 shallots, chopped
  • 4 button onions, sliced
  • 1 bouquet garni
  • 1 clove garlic, minced
  • 13 fl. oz. dry white wine

Directions

    Place all ingredients in a large pot and cover with cold water and bring up to the boil slowly.

    Cook out for no longer than 30 minutes, then strain.
