Vegetable Stuffed Shells

Ingredients

  • 1 (10 oz.) pkg. frozen mixed vegetables
  • 1/2 c. vinegar
  • 1/4 c. salad oil
  • 2 Tbsp. sugar
  • 2 Tbsp. finely chopped green pepper
  • 2 Tbsp. finely chopped fresh onion
  • 1/2 tsp. celery seed
  • 1/2 tsp. mustard seed
  • 12 jumbo pasta shells
  • 6 small lettuce leaves

Directions

    In a saucepan, cook frozen vegetables according to package directions; drain.

    In a small mixing bowl, stir together the vinegar, salad oil, sugar, pepper, onion, celery seed and mustard seed; mix well.

    Stir in the drained vegetables.

    Cover and chill. Cook pasta shells according to package directions.

    Drain and chill.

    Drain vegetable mixture and spoon into shells.

    Arrange stuffed shells on lettuce leaves.
