  • 2 Tbsp. butter
  • 2 cloves garlic, crushed
  • 2 tsp. chopped chives
  • 1/4 tsp. pepper
  • 3 (10 oz.) pkg. frozen Brussels sprouts
  • 2 (10 oz.) pkg. frozen whole kernel corn
  • 3 tomatoes, cut in wedges
  • 1/2 c. chicken stock

Directions

    Melt butter in a large skillet.

    Add garlic, chives and pepper.

    Cook for 5 minutes. Arrange 2 1/2 packages Brussels sprouts in circle in skillet beginning at outer edge.

    Add corn within circle of Brussels sprouts.

    Place tomatoes in next circle. Add remaining Brussels sprouts in center of tomatoes.

    Pour stock over vegetables.

    Cook covered over low heat for 25 minutes or until tender.
