  • 2 c. cooked brown rice
  • 2 c. broccoli florets
  • 2 medium carrots, cut into strips
  • 1 medium zucchini, shredded
  • 1 c. green beans (French-cut)
  • 1 (16 oz.) jar marinara sauce
  • 4 oz. shredded Longhorn cheese
  • 4 oz. shredded Monterey Jack cheese

Directions

    Place rice in a 2-quart baking dish.

    Cook vegetables until tender-crisp; drain. Spoon over rice. Top with marinara sauce. Cover and bake 30 minutes at 375°.

    Combine cheeses. Sprinkle over casserole.
