- 2 c. broccoli florets
- 2 medium carrots, cut into strips
- 1 medium zucchini, shredded
- 1 c. green beans (French-cut)
- 1 (16 oz.) jar marinara sauce
- 4 oz. shredded Longhorn cheese
- 4 oz. shredded Monterey Jack cheese
Directions

1Place rice in a 2-quart baking dish.

2Cook vegetables until tender-crisp; drain. Spoon over rice. Top with marinara sauce. Cover and bake 30 minutes at 375°.

3Combine cheeses. Sprinkle over casserole.

4Bake 5 to 10 minutes more to melt cheese.
