Ingredients
- 8 flour tortillas
- 1 Tbsp. olive oil
- 2 carrots, peeled and shredded
- 1 small onion
- 1 clove garlic, pressed
- 1 (8 oz.) can tomato sauce
- 1 (10 oz.) pkg. frozen chopped broccoli, thawed and well drained
- 1 (10 oz.) pkg. frozen whole kernel corn, thawed and well drained
- 1 (15 oz.) can black beans, drained and rinsed
- 1 Tbsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. ground cumin
- dash of hot sauce
- shredded Cheddar cheese
Directions

1Heat tortillas according to package directions.

2Heat olive oil in a large skillet.

3Add carrot, onion and garlic.

4Cook, stirring constantly, 2 minutes.

5Stir in tomato sauce and next 7 ingredients.

6Cover and simmer 5 minutes.

7Spoon about 1/2 cup vegetable mixture down centers of warm tortillas.

8Sprinkle with cheese.

9Fold sides over filling.

10Serve immediately with salsa and guacamole.
