- 3 cups onion chopped
- 2 1/2 cup red pepper chopped
- 1 1/2 cup celery chopped
- 3 garlic cloves chopped
- 1/3 cup red wine vinegar
- 2 Tbs molases
- 1 1/2 tsp basil
- 1 1/2 tsp oregano
- 1 tsp thyme/coriander
- salt, pepper
- 1/2 tsp chili powder
- 1 bay leave
- 2-3 Tbs olive oil
- 2 cans red beans with liquid
- 1 big can of tomatoes in tomato juice
- 1 can white beans
- 2/3 cup cashews toasted
Directions

1Put first 4 ingredients into a big pan with hot olive oil. Saute for about 8 min. Add next 8 ingredients, beans and tomatoes. Cover and simmer 20 min. Remove bay leave. Add cashews.
