Ingredients

  • 3 cups onion chopped
  • 2 1/2 cup red pepper chopped
  • 1 1/2 cup celery chopped
  • 3 garlic cloves chopped
  • 1/3 cup red wine vinegar
  • 2 Tbs molases
  • 1 1/2 tsp basil
  • 1 1/2 tsp oregano
  • 1 tsp thyme/coriander
  • salt, pepper
  • 1/2 tsp chili powder
  • 1 bay leave
  • 2-3 Tbs olive oil
  • 2 cans red beans with liquid
  • 1 big can of tomatoes in tomato juice
  • 1 can white beans
  • 2/3 cup cashews toasted

Directions

    Put first 4 ingredients into a big pan with hot olive oil. Saute for about 8 min. Add next 8 ingredients, beans and tomatoes. Cover and simmer 20 min. Remove bay leave. Add cashews.
