- 2 Tbsp. creamy peanut butter
- 1 Tbsp. low sodium soy sauce
- 1 1/2 tsp. honey
- 2 tsp. vegetable oil
- 1/2 c. thinly sliced carrots
- 1/4 c. chopped onion
- 1/2 c. broccoli
- 1/2 c. zucchini
- 1/2 c. cauliflower
- 1/2 c. frozen corn
- 1/4 c. red bell pepper
- 1 garlic clove, minced
- 2 c. brown rice, cooked
- 1 oz. cashews
Directions

1In small bowl, mix the peanut butter, soy sauce, 1 tablespoon water and honey; blend and set aside.

2In large skillet or wok, heat oil over medium-high heat.

3Add carrots and onion; stir until onion is translucent, 2 minutes.

4Add remaining ingredients, except rice.

5Cook until vegetables are tender, about 3 minutes. Add peanut butter mixture; cook until boiling, 2 minutes.

6Stir in rice; cook until heated through.

7Arrange cashews on top.
