Vegetarian Fried Rice

Ingredients

  • 2 tbsp peanut oil
  • 2 None eggs, lightly beaten
  • 2 cloves garlic, minced
  • 2 tsp finely grated fresh ginger
  • 26 oz cooked rice
  • 1 lb leftover vegetables, diced
  • 2.5 oz frozen peas
  • 1/3 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 3 None spring onions, finely sliced

Directions

    Heat 2 tsp peanut oil in a wok over high heat. Add eggs and swirl to coat wok. Cook until just set then remove from wok and let cool slightly. Roll up and slice.

    Add remaining oil to wok and stir-fry garlic and ginger over high heat for 1 min, or until fragrant. Add rice and vegetables. Stir-fry for 2-3 mins, until peas are tender. Add sweet chili sauce and soy sauce. Stir-fry for 1-2 mins, until heated through.

    Serve rice topped with omelette and sprinkled with spring onions.
