Vegetarian Orange Bulgur

  • 1/4 cup bulgur wheat
  • 2 tsp. extra virgin olive oil
  • 1/8 tsp. salt
  • 1/4 cup orange juice
  • 2 Tbsp. fresh parsley, chopped
  • 1/4 cup canned mandarin oranges (in juice)
  • 1/4 cup black beans cooked or canned without added salt
  • 1 chewy fruit-filled cookies
  • 8 fl oz fat-free milk

Directions

    Bring 1/3 cup water to boil; add bulgur, oil, and salt; cover and simmer over very low heat 5 min.

    Turn off heat and stir in orange juice and parsley; cover and steam for 15 min.

    Stir oranges and beans into bulgur.

    Enjoy a fig bar cookie for dessert.
