- 2 cups water
- 1 cup israeli couscous, raw
- 2 carrots, sliced
- 1 plum tomato, chopped
- 14 cup onion
- 1 garlic clove, minced
- 2 (19 ounce) cans tomato soup (not condensed)
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 tablespoon fresh basil (or 1 teaspoon dried basil)
- 12 teaspoon salt
- 12 teaspoon dried oregano
- 12 teaspoon dried marjoram
- 14 teaspoon pepper
- shredded parmesan cheese (optional)
Directions

1In a large saucepan, bring water to a boil.

2Stir in the couscous, carrots, tomato, onion and garlic.

3Bring to a boil.

4Reduce heat; simmer, uncovered, for 10-15 minutes or until tender and water is absorbed.

5Stir in the remaining ingredients; heat through.
