Vegetarian Split Pea Soup

- 2 c. split peas, washed
- 2 qt. water
- 1 c. sliced celery
- 1/2 c. diced onion
- 1 c. chopped carrots
- 1 c. diced potato
- 1 clove garlic, minced
- 1 bay leaf
- 1/4 c. snipped parsley
- 1/2 tsp. crushed oregano
- 1/2 tsp. crushed basil
- 1 tsp. dried Italian seasoning
- 1/2 tsp. salt
- pinch of cayenne
Directions

2Dutch oven. Bring to a boil. Reduce heat, cover and simmer 1 hour or until split peas are cooked through.

3Remove bay leaf before serving.
