Vegetarian Stuffing

  • 1 loaf day old white bread (cubed) or 1 package Stove Top stuffing mix
  • 2 boxes morningstar breakfast links (20 oz. sausage)
  • 1 onion - chopped
  • 4 celery stalks - chopped
  • 1 cup canned water chestnuts - drained and quartered
  • 1 cup pecans (about 4 oz) - chopped coarsely
  • 2 tbs fresh parsely - chopped
  • 2 tbs fresh cilantro - chopped
  • 4 tbs fresh sage - chopped or 1 1/4 tsp ground dried sage
  • 3 cups vegetable stock
  • 2 tbs butter
  • 1/2 tsp pepper

    Preheat oven to 375 degrees

    On stove, melt butter over medium/low heat

    Cook sausage and crumble

    Mix sausage, onion and celery. Cook for 10 minutes.

    Mix in chestnuts, pecans, parsley, cilantro, sage and 1/2 cup broth. Cook for ~1 min.

    Add bread or stuffing mix and 1 1/2 cup broth.

    Add pepper.

    Stir well and put in oven for 30 mins covered (halfway at 15 mins -- remove cover).
