  • 1/3 c. butter or margarine, melted
  • 1 egg
  • 2 tsp. water
  • 1/2 c. all-purpose flour
  • 1/2 tsp. salt
  • 2 c. fresh vegetables (broccoli or cauliflower)
  • 1/4-inch carrot slices
  • 1/2-inch sliced zucchini
  • 1/2-inch strips green or red pepper

    Heat oven to 450°.

    Brush bottom of 13 x 9 x 2-inch rectangular pan with butter or margarine, melted.

    Beat egg and water with fork.

    Mix flour and salt in another small dish.

    Dip 1/4 of veggies into egg mixture.

    Remove one piece at a time with slotted spoon, fork or hands.

    Roll in flour mixture to coat. Place in pan.
