- 1/3 c. butter or margarine, melted
- 1 egg
- 2 tsp. water
- 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 2 c. fresh vegetables (broccoli or cauliflower)
- 1/4-inch carrot slices
- 1/2-inch sliced zucchini
- 1/2-inch strips green or red pepper
Directions

1Heat oven to 450°.

2Brush bottom of 13 x 9 x 2-inch rectangular pan with butter or margarine, melted.

3Beat egg and water with fork.

4Mix flour and salt in another small dish.

5Dip 1/4 of veggies into egg mixture.

6Remove one piece at a time with slotted spoon, fork or hands.

7Roll in flour mixture to coat. Place in pan.
