  • 10 ounces frozen broccoli
  • 10 ounces frozen cauliflower
  • 4 ounces sliced mushrooms, drained
  • 8 ounces sliced water chestnuts, drained
  • 14 cup diced onion
  • 14 cup Minute Rice
  • 14 cup skim milk (any)
  • 1 (10 3/4 ounce) can cream of broccoli soup (you can use reduced fat)
  • 1 teaspoon butter
  • 8 ounces Velveeta cheese, cut up (you can use 2% Velveeta or use swiss cheese)

Directions

    Rinse frozen vegetables under cold water and drain.

    Mix all ingredients together and place in a casserole dish.

    Bake at 375 degrees uncovered for 45 minutes.

    Stir occasionally.
