Ingredients

  • 1/4 cups Butter
  • 3/4 cups Shredded Carrots
  • 1/4 cups Slivers Of Red Pepper
  • 1/4 cups Sliced Green Onion
  • 2 teaspoons Minced Garlic
  • 1 loaf Italian Bread
  • 1 cup Shredded Italian Blend Cheese

Directions

    Preheat oven to 375 degrees F. Cover a cookie sheet or baking pan with foil.

    Melt butter in small frying pan.

    Add veggies and minced garlic.

    Saute over medium heat for 5 minutes, stirring occasionally.

    Cut the bread in half lengthwise so you can lay the top and bottom next to each other with the cut side up.

    Spoon the veggies over each half and sprinkle with the shredded cheese.

    If you want to prepare in advance, you can wrap the bread and refrigerate at this point.

    Place the bread halves on the prepared pan and bake for 12-15 minutes until cheese has melted and bread edges are toasted.

    Slice each bread half into 8-10 slices.
