- 1/4 cups Butter
- 3/4 cups Shredded Carrots
- 1/4 cups Slivers Of Red Pepper
- 1/4 cups Sliced Green Onion
- 2 teaspoons Minced Garlic
- 1 loaf Italian Bread
- 1 cup Shredded Italian Blend Cheese
Directions

1Preheat oven to 375 degrees F. Cover a cookie sheet or baking pan with foil.

2Melt butter in small frying pan.

3Add veggies and minced garlic.

4Saute over medium heat for 5 minutes, stirring occasionally.

5Cut the bread in half lengthwise so you can lay the top and bottom next to each other with the cut side up.

6Spoon the veggies over each half and sprinkle with the shredded cheese.

7If you want to prepare in advance, you can wrap the bread and refrigerate at this point.

8Place the bread halves on the prepared pan and bake for 12-15 minutes until cheese has melted and bread edges are toasted.

9Slice each bread half into 8-10 slices.
