Ingredients

  • 10 lbs Spanish onions, diced
  • 10 lbs red peppers
  • 10 lbs green peppers
  • 10 lbs kidney beans, cooked
  • 5 lbs celery, diced
  • 5 lbs carrots, diced
  • 5 lbs red bulgur wheat
  • 40 lbs tomatoes, strips
  • 20 lbs tomato puree
  • 8 cups tamari
  • 2 cups lime juice
  • 1 cup canola oil
  • 1 cup olive oil
  • 2 cups garlic
  • 2 cups chili powder
  • 2 cups oregano
  • 2 cups cumin
  • 6 bunches cilantro
  • 8 ounces chipotle peppers
  • 8 jalapeno peppers
  • 2 tablespoons crushed red pepper flakes
  • 2 gallons water

Directions

    Saute all veggies in oil.

    Add wheat, tomatoes, tomatoes and water, bring to a boil.

    Add all spices, cooked beans and simmer for one hour.

    Add cilantro and lime juice.
