- 1 tablespoon vegetable oil
- 2 scallions, sliced
- 4 ounces cherry tomatoes, halved
- 4 large eggs
- 2 whole wheat pita bread, toasted
Directions

1Heat the oil in a non-stick pan, add onions and tomatoes and fry for 1 minute

2Beat the eggs with salt and freshly ground black pepper.

3Pour the egg mixture into the pan.

4Cook over a gentle heat for 3 mins, stirring until scrambled and then set aside.

5Cut the pita breads in half and open to make pockets.

6Spoon the egg and tomato mixture into each pocket.

7Serve warm.
