  • 1 cup Sliced Fresh Mushrooms
  • 1 cup Fresh Baby Spinach
  • 3 whole Eggs
  • 1/4 cups Feta Cheese

Directions

    Spray a non stick pan and cook mushrooms for several minutes until browned.

    Add the spinach and a tablespoon of water.

    While the spinach is cooking, whisk the eggs in a separate bowl, then add to veggie mixture. You can either scramble them or make an omelet.

    When the eggs have almost finished cooking, add the feta ( prefer the basil and tomato feta). When the cheese has melted, serve immediately.

    Add salt/pepper to taste and it goes great with sliced fresh tomatoes or a piece of buttered whole grain toast.
