Veggie (or Quinoa) Rice

Ingredients

  • 1 1/4 cup uncooked white rice (or Quinoa)
  • 1 3/4 cup water
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 cup zucchini squash, peeled and diced
  • 1 cup chopped mushrooms
  • 1 tbsp minced garlic
  • 2 tbsp olive oil
  • 1/2 cup grated parmesan cheese
  • 1 tsp oregano (or italian seasoning mix)
  • 1 salt & pepper to taste

Directions

    Saute veggies in olive oil till soft.

    (I used the insides of the zucchini for stuffed zucchini boats.)

    Add in garlic, rice or Quinoa and oregano, saute 1 minute more.

    Add in water and bring to a boil.

    Turn off heat and cover and let sit till most all water is absorbed.

    If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed.

    Stir in Parmesan cheese and extra seasoning if desired serve.

    Enjoy as a main dish or side with fish, Pork chops, steak or chicken!
