- 1 large flour tortilla
- 2 fresh mushrooms
- 1 c. chopped broccoli
- 1/2 c. chopped cauliflower
- 1 fresh tomato
- 3/4 c. cheese of choice (low-fat!!)
- 1/4 c. diced green onion
- any other vegetable you want
Directions

1Slice mushrooms.

2Steam broccoli and cauliflower together in a pan.

3Drain and set aside.

4Slice tomato and set aside.

5Grate cheese and set aside.

6Dice green onions and set aside.

7Place flour tortilla on ungreased pan.

8Layer veggies on tortilla: broccoli, cauliflower, mushrooms, onions and tomato.

9Top with cheese.

10Bake at 350° until the cheese is melted.

11Ready to eat!!
