Ingredients

  • 2 deep dish pie shells
  • 1 qt. half and half
  • 2 eggs, beaten
  • olive oil for sauteing
  • 2 or 3 zucchini and/or other vegetables (such as broccoli or cauliflower), chopped
  • 2 garlic cloves, minced
  • 1 medium onion, chopped
  • 1 tsp. basil
  • 1 tsp. thyme
  • salt and pepper to taste
  • Mozzarella or Monterey Jack cheese, shredded

Directions

    Preheat oven to 375°.

    Mix half and half and eggs; set aside. In skillet, saute vegetables and garlic in olive oil until tender. Add herbs, salt and pepper.

    Add to the egg mixture and pour into preheated pie shells.

    Bake at 375° for 20 to 25 minutes until nearly set.

    Top with shredded Mozzarella cheese and return to oven for 5 minutes more.
