- 1/3 - 1/2 c. each green onions, carrots and celery (optional), finely chopped
- 1 c. white long grain rice
- 1 3/4 - 2 c. chicken broth (Swanson's Fat Free or homemade)
- 1/2 tsp. salt
- 2 1/2 tsp. olive oil
- lemon pepper to taste
Directions

1Put oil in saucepan on medium/high heat.

2Stir in vegetables and rice.

3Stir 2 to 3 minutes until well coated (not brown).

4Add broth and bring to a boil.

5Turn to low and cover with lid.

6Cook 15 minutes and then turn off stove.

7Leave pot on stove eye at least 15 more minutes).

8Fluff with fork and add lemon pepper to taste.
