Ingredients

  • 1 (20 oz.) can white Shoe Peg corn, drained
  • 1 (20 oz.) can small green peas, drained
  • 1 (20 oz.) can French-style green beans, drained
  • 1 c. finely chopped onions
  • 1 c. finely sliced celery
  • 1 c. finely chopped green pepper
  • 1 (4 oz.) jar chopped pimentos
  • 1/2 c. vegetable oil
  • 1 c. sugar
  • 3/4 c. white vinegar
  • salt and pepper to taste

Directions

    Combine corn, peas, green beans, onions, celery, green pepper, and pimentos in bowl.

    Toss to mix.

    Combine oil, sugar and vinegar in microwave-safe bowl.

    Microwave on High for several minutes.

    Stir until sugar is dissolved.

    Pour over vegetables; mix well.

    Cool slightly.

    Chill overnight to several days, stirring once each day.
