  • 12 green zucchini, diced
  • 14 red bell pepper, diced
  • 3 broccoli florets, chopped
  • 14 cup red onion, chopped
  • 1 large whole egg
  • 3 egg whites
  • 1 ounce parmesan cheese, grated
  • nonstick cooking spray

Directions

    Whisk together whole egg and egg whites.

    Heat a nonstick skillet coated with nonstick cooking spray over medium heat.

    Add all vegetables and saute for about 3 to 5 minutes, until they begin to soften.

    Add in egg mixture and scramble together; continue to cook until eggs are cooked through, about 3 to 4 minutes.

    Remove from heat and sprinkle with cheese.
