  • 2 cups rice (your choice )
  • 1 large carrot
  • 1 large parsnip
  • 2 stalks celery
  • 8 sun-dried tomatoes
  • 14 cup of sweet chili sauce
  • 12 cup chipotle adobo sauce
  • 2 teaspoons coconut oil, unflavoured

    Make rice while getting rest of the ingredients ready.

    sautee onions and garlic in coconut oil.

    slice Carrots and Parsnip with peeler add to onions and garlic.

    slice Celery add to pan and stir.

    add sun-dried tomatoes , and Chipotle sauce.

    stir all ingredients together cove let simmer stirring occasionally.

    Put vegetables on bed of rice , drizzle with sweet Chilli sauce.
