Venison Cacciatore

- 1 1/2 lb. venison
- 1 c. red wine
- 1/4 c. olive oil
- salt and pepper
- vegetable oil
- 1 lb. mushrooms, sliced
- 3 garlic cloves, minced
- 1 pt. canned tomatoes
- 1/4 c. chopped parsley
- 1/4 tsp. basil
Directions

1Marinate the venison in the wine (red vinegar may be substituted), olive oil, salt and pepper to taste.

2Remove the meat the next day and save the marinade.

3Saute meat in oil in a large skillet until browned on both sides.

4Remove from skillet and saute garlic.

5Add meat, tomatoes, parsley, mushrooms, basil, marinade and basil.

6Simmer for about an hour or until meat is tender.
