- 1 pt. salt
- 1 tsp. saltpeter
- 1/4 lb. brown sugar
Directions

1Mix ingredients.

2Do not add water.

3Divide meat into three equal parts.

4Rub mixture on each piece of meat for three days. Put in a jar or crock.

5(Will make its own brine.)

6Leave for one week to 10 days, depending on size of pieces.

7Rinse off salt brine and hang to cure.
