- 5 lb. lean venison, ground
- 3 tsp. Accent
- 1 tsp. cayenne pepper
- 2 tsp. pepper
- 1 oz. liquid smoke
- 1 oz. water
- 1 tsp. marjoram
- 9 tsp. salt
- 2 tsp. garlic powder
- 1 tsp. Worcestershire sauce
- 1 tsp. soy sauce
- 1 1/2 tsp. Tender Quick
Directions

1Blend all ingredients well; roll between wax paper sheets. Take off top sheet and brush meat with 1 ounce liquid smoke diluted with 1 ounce of water.

2Place in oven on wire racks.

3Dry partially at 160°, then remove paper.

4Place back on wire racks and dry for another 3 to 4 hours.

5Cut as desired.
