  • 3 Tbsp. flour, divided
  • 2 tsp. salt
  • 1 tsp. dry mustard
  • 1/2 tsp. chili powder
  • 1/4 tsp. pepper
  • 5 lb. shoulder, chuck, leg or round roast of venison, fat trimmed off
  • 4 strips bacon
  • 1/4 c. butter, margarine or oil
  • 1 1/2 c. hot water
  • 1/4 c. each: chili sauce and cider vinegar
  • 2 Tbsp. brown sugar or honey
  • 1 tsp. Worcestershire sauce
  • 1/4 c. cold water

    Mix 1 tablespoon flour, salt, mustard, chili powder and pepper.

    Rub well over meat.

    Reserve any excess.

    Place strips of bacon over meat and secure with picks.
