- 3 Tbsp. flour, divided
- 2 tsp. salt
- 1 tsp. dry mustard
- 1/2 tsp. chili powder
- 1/4 tsp. pepper
- 5 lb. shoulder, chuck, leg or round roast of venison, fat trimmed off
- 4 strips bacon
- 1/4 c. butter, margarine or oil
- 1 1/2 c. hot water
- 1/4 c. each: chili sauce and cider vinegar
- 2 Tbsp. brown sugar or honey
- 1 tsp. Worcestershire sauce
- 1/4 c. cold water
Directions

1Mix 1 tablespoon flour, salt, mustard, chili powder and pepper.

2Rub well over meat.

3Reserve any excess.

4Place strips of bacon over meat and secure with picks.
