- 8 strips bacon
- 1 medium onion, sliced
- 1 (4 lb.) venison roast
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. celery salt
- 1/4 c. vinegar
Directions

1Place 4 strips of bacon and half of the onion in roasting pan. Rub roast with salt, pepper and celery salt.

2Place roast over onion and bacon.

3Arrange remaining bacon and onion on top of roast.

4Sprinkle vinegar over all.

5Bake, uncovered, at 300° to 325° for 2 to 3 hours.

6Turn often.

7Cover, if roast becomes too dry.
