- shoulder or saddle of venison
- vinegar
- 3 or 4 sliced onions
- 6 bay leaves
- flour
- salt
- pepper
Directions

1Place meat into an earthen jar.

2Cover with vinegar, onions and bay leaves.

3Allow to stand at least 2 days.

4Remove meat from jar and wash it with cold water.

5Place in pot.

6Cover with boiling water; simmer slowly until tender.

7Remove meat.

8Mix flour with a little water; add to liquid in pot, stirring until thickened.

9Add salt and pepper to taste.
