  • 4 eggs
  • 3/4 c. maple syrup
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1 c. Vermont maple syrup
  • 2 egg whites, stiffly beaten

Directions

    Separate the eggs; beat separately.

    Heat 3/4 cup syrup to a boiling point.

    Slowly pour in yolks, beating constantly.

    Fold in beaten whites, vanilla, salt, flour and baking powder.

    Bake in greased tube pan in 325° oven for 50 minutes.
