  • 4 flour tortillas
  • 1 cup cooked brown rice
  • 14 cup diced cucumber
  • 14 cup chopped scallion
  • 1 large tomatoes, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice

Directions

    In a large bowl, combine all ingrediants and salt and pepper to taste.

    Mix well, cover and refridgerate for at least an hour.

    Divide mixture evenly among the tortillas, fold ends and roll up.
