Vern'S Coconut Cake

  • 1 pkg. yellow cake mix (2 layer size)
  • 1 pkg. vanilla instant pudding and pie filling mix
  • 1-1/3 c. water
  • 4 eggs
  • 1/4 c. oil
  • 2 c. shredded sweetened coconut
  • 1 c. chopped walnuts or pecans

Directions

    Blend cake mix, pudding, water, eggs and oil in a large mixing bowl.

    Beat at medium speed with electric mixer for four minutes, stir in coconut and nuts. Pour in bundt type pan, bake at 350 degrees for 35 minutes.

    Cool in pan for 15 minutes, then remove and allow to finish cooling.

    Frost with cream cheese frosting (see frostings).
