Ingredients

  • 2 c. milk
  • 5 Tbsp. salt
  • 1/4 c. sugar
  • 2 cakes compressed yeast
  • 1/4 c. water at 85~
  • 8 to 10 c. flour

Directions

    Scald milk.

    Add salt and sugar and cool mixture to 85°. Dissolve yeast in water.

    Combine milk and yeast mixtures and mix until smooth.

    Gradually add flour and mix after each addition. Knead well; let rise covered until double in bulk.

    Shape dough as you wish.

    Permit rolls to rise in covered pans until doubled. Bake for about 40 minutes at 275°.

    Makes 5 dozen rolls.
