Ingredients
- 2 c. milk
- 5 Tbsp. salt
- 1/4 c. sugar
- 2 cakes compressed yeast
- 1/4 c. water at 85~
- 8 to 10 c. flour
Directions

1Scald milk.
-
2Add salt and sugar and cool mixture to 85°. Dissolve yeast in water.

3Combine milk and yeast mixtures and mix until smooth.

4Gradually add flour and mix after each addition. Knead well; let rise covered until double in bulk.

5Shape dough as you wish.

6Permit rolls to rise in covered pans until doubled. Bake for about 40 minutes at 275°.

7Makes 5 dozen rolls.
